The dark crust and the chew both come from one step that home bakers routinely skip: a baking soda bath before the oven. Without it you have bread in a knot shape.

Combine the warm water, yeast and brown sugar, wait 5 minutes for it to foam, then add the flour, salt and melted butter. Knead for 8 minutes until smooth and slightly tacky.
Cover and leave in a warm place for about an hour until doubled. A slow rise builds the flavour that separates a pretzel from a roll.
Cut into 8 pieces and roll each into a rope about 24 inches long. Thin ropes give you the chew, thick ones give you bread.
Make a U, cross the ends twice, then fold the twist down onto the bottom of the U and press to seal.
Bring the water and baking soda to a rolling boil and drop in 2 pretzels at a time for 30 seconds. This is the step that creates the crust and the colour. Do not skip it.
